As consumer demand for sustainably farmed seafood rises, over 500 chefs from all across Canada, shellfish growers and environmentalists will gather this weekend at an unprecedented event,
The 2010 Canadian Chef’s Congress on Vancouver Island.
Vancouver Island is Canada’s top Oyster producing region and home to the new Vancouver Island University field station for Shellfish Research.
“Shellfish Aquaculture is a good news industry, a clean industry with tremendous potential in BC” says Roberta Stevenson, a former shellfish farmer and now Executive Director of The British Columbia Shellfish Growers Association. With miles of pristine coastline and cool, nutrient rich waters, British Columbia has the optimal environment for developing shellfish aquaculture. Producing world class oysters, clams, scallops, mussels and geoduck, this $37 million dollar, environmentally sustainable , industry is an important economic driver, currently providing over 1,000 full time, year round jobs in some of our most remote coastal regions.
This year’s theme is Oceans For Tomorrow and the dialogue will focus on Canadian food identity, food security and sustainability and what they as a national group can do to affect change.
This gathering of chefs for the health of our oceans has never happened before in Canada. We don’t believe it has ever happened anywhere in the world! The congress is attracting icons of the industry and the crème of the Canadian culinary world including congress founder Michael Stadtländer, long considered one of the world’s top chefs and the pioneer of Canada’s new breed of Farmer-Chefs. From Vancouver Chefs Robert Clark and Vikram Vij to Toronto’s Jamie Kennedy; chefs from every part of Vancouver Island and chefs from every Province and every Territory will be in the Cowichan Valley.
The list of chefs participating is unprecedented, the guest speakers compelling and the panel discussions enlightening.
